Food Friday!

Coconut Shrimp (spicy but not hot)

35 large shrimp deveined
1/4 cup of lime juice
1/2 tsp. salt
1 1/2 tsp. curry powder
1/2 tsp ginger
1 1/2 cup grated coconut
12 oz. beer
2 1/2 cups flour

Apricot Dipping Sauce:
1 cup apricot preserves
1/4 cup raspberry vinegar
1/4 cup sherry vinegar
1 tsp. paprika
dash of Tabasco sauce
2 tsp. salt
1/2 tsp. pepper
1 tbs. sugar

Split shrimp lengthwise down to tail with a sharp knife, but do not sever tail.
Combine lime juice, salt, hot curry powder and ginger in a small bowl.
Add shrimp, cover and refrigerate for at least 2 hours.
To prepare coconut coating and beer batter, lightly toast coconut
on cookie sheet at 375 degrees for 3 to 5 minutes. Set aside.
Mix beer, flour, salt, white pepper, sugar and paprika.
Heat oil in heavy skillet; hot. Dip shrimp in batter and fry until brown.
Roll immediately in toasted coconut. Serve with apricot sauce.

Combine apricot preserves, both vinegars, paprika and Tabasco in a
small saucepan over medium heat for 3 to 4 minutes, stirring several times.
Heat until thoroughly blended. Serve warm with coconut shrimp.

About the Town

Gulf Shores is really wonderful. It's a little bit big city, but sweet, charming town. Even with it's quirks.

My observations:

* People here {love} their fried fish here. And it is so good. Like "dunk it in the homemade tartar sauce and a moan rumbles from your throat" good.

* When the speed limit is 35 mph, go 35 mph. They're pretty strict about it.

* Nice people are everywhere. It's contagious.

* The beach boulevard has a place for bike riders and walkers, so if you come, bring your bike.

That is really all that I have right now, but I'm sure more will come soon.

Sweet Home Alabama

I'm finally here! Last Monday, I drug too much luggage to Gulf Shores, Alabama to stay in my beach front rental, while I begin work at a new job. (Pic at left is view from front door.)

So, here's the update:

* As I was unpacking, and making a list of what I needed, I noticed that a few of my left shoes were missing. Because I recently broke my left ankle, I haven't really been able to wear shoes on that foot. Obviously I didn't plan ahead and now need those shoes. Luckily they have a few outlets (see next item).

* They have a great outlet here with Ann Taylor, Ralph Lauren, Nautica, Banana Republic, and more. It's dangerous- but oh so good!

* The new job feels like home! It really is fabulous, and I'm enjoying meeting the people and the training.

* I've been house hunting here and found a very cute blue and white home, with a very welcoming front porch.

* I'm missing the main {furry} man. His current family loves him and is taking good care of him, but I miss his excitement. Hopefully my house will sell soon, so I can bring him home.

Key Largo Cooler

Ingredients:
2 oz. 10 Cane Rum
1 oz. DeKuyper Key Largo Schnapps
1.5 oz. orange juice
1.5 oz. pineapple juice

Prep:
Shake the ingredients together, pour on ice, and garnish with a cherry and a slice of fresh pineapple. Put on some Jimmy Buffett and enjoy!

Recipe- Marks Feed Store Potato Salad

Here in Kentucky, it isn't always about fried chicken. Sometimes it's about BBQ!! One of the more well known places here is called Mark's Feed Store. Not only do they have great BBQ, but also super-fab potato salad! Enjoy!

Mark's Feed Store Potato Salad
(makes 10 servings)

Ingredients:
3 lbs unpeeled red potatoes
4 eggs
1 1/2 cups mayonnaise
2 tablespoons milk
3 tablespoons white vinegar
1/2 cup sliced green onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sliced celery

Prep:
1. Bring large pot of salted water to a boil. Add red potatoes, cook until tender but firm, (about 15 minutes). Drain cooked potatoes, cool and then chop into 1 inch cubes.
2. Bring eggs to a boil, cover and let eggs stand in hot water 10 minutes, cool, peel and dice.
3. In a small bowl whisk together mayo, milk, vinegar, green onions, salt and pepper. Set aside.
4. Add potatoes to the mayo mixture, mix well covering all potatoes, and then add the eggs and celery. Chill 2 hours before serving.
5. Because I like vinegar, I added a bit more at the end to taste.

<- In less than a week, I'll be here (otherwise known as Gulf Shores, AL).

Needless to say, I've been so stressed! I really don't know where to begin. {drama alert} The doctor finally put me in a walking shoe, and it really isn't that cute, but it's functional. I guess that's what matters.

My packing list is pretty much done, but I need to organize a bit more. The last thing I want to do is find myself down in Alabamee and discover that I forgot something. Big ole yikes!

The house is finally on the market, the dog is visiting a friend for a few months, and the cat is seeking a new home. So far so good.

Trash to Treasure

Now, you know I love flea markets, estate sales, thrift stores, Habitat ReStores, yard sales, etc. However, sometimes it takes imagination to see the potential for the pieces you love. Unfortunately, my imagination ideas aren't always original, so whenever I see how others have taken their trash to treasure, I try to make notes.

Inspiration (courtesy of Real Simple)

1. Assigned Space: Vintage letters are a clever way to designate hooks on a coat rack. Try to match the style of the letter to the personality of the owner. These flea-market finds are easy to install -- secure an initial above each hook with adhesive mounting squares, which can hold up to two pounds, or use a heavy-duty two-part epoxy intended for most surfaces.

2. Stacked Cabinets: These two flea-market cupboards looked nothing alike, yet it wasn't hard to turn them into a single piece that functions like an armoire. All we did was paint them the same shade of white and blue-green and then add polished-nickel latches and crown molding. We stacked them and placed display items in the glass-front and linens underneath.

3. Indoor Shutters: Modern windows no longer accommodate outdoor shutters, but that's no reason to pass shutters by at flea markets or secondhand shops -- when cleaned up and painted, they make charming indoor accessories.

4. Handkerchief Pillowcase: Leftovers are the bane of the sewing room as well as the kitchen. But the same creativity that inspired cassoulet can save odd lengths of fabric from ragbag ignominy. One idea: Use strips of cloth or lace to trim the opening of a cotton pillowcase. A monogrammed handkerchief from a flea market can be folded diagonally and machine-stitched to a pillowcase, creating a wonderful gift for someone with the right initial.

Recipe- Italian Bread Salad

I hadn't heard of this before, until a friend explained. The more she spoke, the more by mouth watered! It seems like a light alternative to a heavy summer side.

Italian Bread Salad

Ingredients

1 clove garlic
1 (1 pound) loaf Italian bread
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 clove garlic, minced
2 cups chopped fresh basil
1/8 cup chopped fresh thyme
1/4 cup olive oil
2 tablespoons balsamic vinegar

Directions

Rub a peeled clove of garlic around a wooden salad bowl.
Pull apart or chop the bread into bite-size pieces.
In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

Peaches, cucumbers, and tomatoes...

Since I'm a little incapacitated, I've been staying with my grandparents. They aren't your typical grandparents. Oh no! They work more now that they are retired, have a huge garden, and love computers! They are original "greenies" and did it before it was cool. For example,

~ Their garden is filled with potatoes, corn, tomatoes, cantalope, beans, and peach trees! I've picked so many beans, I can now peel them and talk at the same time! Last night we got creative and had ice cream with peaches. {yum!}

~ Instead of buying new, they try to re-use what they already have. Right now my grandpa is working to repair his riding mower. It's cute to see him mutter to himself. ;)

My grandpa also loves computers. He makes alot for family and even neighbors. I can't tell you how many times he's worked on my printers.

If you can't tell it, I'm really close with them and they truly are gems. So right now, I'm just enjoying being with them.

Doors and Windows

Unfortunately, this post isn't about any real doors or windows. Instead, it's about how when doors may close, a window usually opens. With these terms, a lot has been happening here. (Big sigh)

* My program at work was cut, which included my job. So, as of June 30 I was among the many who were laid off. Not what I was expecting. {door}

* My relationship ended. So much to be said there, but I won't bore you with the details. {door}

* I applied for another job, got a phone interview, an in-person interview, and an informal offer..which means:

* Kentucky Fried Home may be Alabama Fried Home very soon. {window}

Project for the Mobility Challenged

Since I've been unable to walk around as usual, I've been doing a lot of reading (stalking various blogs like NewlyWoodwards- have you seen their home pictures?! Swoon!). Unfortunately, this means that my to do list is getting huge. :)

Anyway, the other day while couch surfing I stumbled upon the blog Under the Table and Dreaming. So looked a bit and then crawled under the table. It was wonderful. It has so many good ideas, and here is one I can try while in my (wheel) chair.

I've been looking for a coffee table for my t.v. room for quite a while now. Unfortunately, I'm a little unsure of what I want. Some storage would be nice, but I already have too many "heavy" pieces in the room, and am afraid that something with storage would add too much. I would prefer something durable and unusual.

Luckily, while couch surfing today, I think I found an alternative.

Long Time Gone (Boy do I have a story for you!)

Sorry I've been MIA. My Memorial Day weekend was good, until the end. Me and the boy headed to a Kentucky State Park to do some camping. And of course a whole lot of eating of the usuals- hot dogs, hamburgers, and smores! Yummy!

Everything was going good until the very last day. We were starting to pack up when Alby and I headed to the bathroom, which was up a slight hill. Going up was fine, coming down was the problem. Unfortunately, Alby wanted to walk down the hill, and I wanted to use the stairs. Alby won and I lost, big time!

Coming down the hill, I fell and fractured (broke) both sides of my ankle. Big ouchie! Pain everywhere! Needless to say, the boy took me to the hospital (at warp speed- no complaints here) where they gave me glorious pain meds and x-rayed the boo-boo. To make a long story short, I'll be having surgery this week where they will insert screws to help the ankle heal.

What can I say, when I do it, I do it right!

April Goals Update..

Yes, I'm a bit behind on the goals update.

Personal Development:
1. Make a new healthy recipe and blog it.- DONE. I made and blogged a potato recipe.

2. Take at least 5 new pictures, and label them, to keep memories.- DONE. These include pictures of Alby, the house, the Wicked play, and craigslist finds.

3. Be romantic on a $5 budget.- DONE. I purchased the boy an ice cream treat. :)

Clean/Organization/Decorate:
Work on the home office including:
1. Paint the twin bed. - FAIL
2. Add new hardward to white desk.- FAIL
3. Paint the room.- FAIL

Healthy Me:
1. Walk for at least 20 consecutive minutes at least once a week.- DONE. Since getting Alby, it's not hard for me to walk at least twice a day!

2. Attempt small changes in diet to eat healthier- more veggies!- DONE. I've been on a cucumber kick lately.

3. Plant tomatoes.- DONE. I also planted cucumbers and peppers.

Room Switcheroo

Over the weekend, I began to consider my furniture and whether or not it has the best placement. This is actually a hobby of mine. You never know where the furniture will be when you come over. :)

Currently, I have a mixed set in the dining room, with an expandable table, and 4 comfy chairs. See below.

The kitchen area has an oak color table which seats 6.

I think it's time to paint the kitch oak set a black with a brown diamond pattern, and move it to the dining room. It would look a bit more formal with a different color and I can move the small hutch with it.

The mixed dining room set will be moved into the kitchen, with the table extensions removed. It's chairs are so comfortable, and with a few white slip covers, it would make a nice kitchen set.

Weekend Recap

This weekend was super! I spent Saturday with beer, brats, and baseball! And of course- my favorite boy in the whole world!

We went to the Louisville Slugger Field to watch the Louisville Bats kill the Scranton/Wilkes-Barre Yankees. Even though it was pretty warm to be outside in the sun (80), it cooled off in the shade by the last two innings. :)

This week I plan to work on the home office (again), and get some camping supplies together.

Sweet and Salties Recipe

I saw this in a magazine and had to share! Warning: it's not low fat, or low-cal! :)

Sweet and Salties
(20 servings)

You'll need:

40 saltine crackers (use grahams for sweeter snack)

2 sticks unsalted butter

1 cup light brown sugar

8 oz semi-sweet choc chips (about 1 1/3 cups)

Prep:

1. Preheat oven to 425. Line baking sheet (not glass) with aluminum foil and the crackers

2. In a medium saucepan, melt butter and sugar and bring to a boil. Boil for 5 min.

3. Remove from heat and pour over crackers, covering them evenly.

4. Place baking sheet into oven and watch them closely. Bake for 5 min or until just bubbly.

5. Remove from oven and pour chocolate chips over crackers. when chips begin to melt, spread them over crackers with a knife or spatula.

6. Transfer pan to freezer. Let stay 15-20 min or until cold.

7. Remove from freezer and break/cut into pieces.

8. store in air tight container.

Addition to the Family

This weekend, as a special treat, I made Cinnamon Banana Pancakes. They were super fab! But before I get to the recipe, I want to share a little heart attack moment I had this weekend.

While at Walmart, I really needed to get some olive oil (yes, I'm a little Rachel Ray). I was happily wandering to the right section, and saw this!

Um, excuse me! $4.36? Don't. Think. So. Movin' on.

On to something sweeter:

Cinnamon Banana Pancakes
(makes 4)

1 cup all-purpose flour
1 1/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup milk
1/4 cup packed dark brown sugar
2 tablespoons vegetable oil
1 egg
1 teaspoon vanilla extract
3 bananas, peeled and mashed

Prep:
1. Combine all ingredients, except bananas, in a mixing bowl. Whisk together.
2. Add bananas and mix well.
3. Pour about 1/4 of the batter into a greased (or buttered) skillet over medium heat.
4. Cook until golden brown on both sides (about 4-6 min).
5. Serve with butter, syrup, and piping hot coffee. Enjoy!

I was so excited to see these beauties yesterday! Aren't they gorgeous! I planed them about 3 years ago along the house in the backyard and am so pleased with the results.

Having pretty flowers in the house makes me smile!

The Gift that Gives and Saves

Yesterday, while at one of my favorite shops in town (Seek and Find), I found a gift for Cleo. If you remember, she loves water! (see those pics here)

So while in the shop I found some water tabletop water fountains for about $2. It was so worth the money because I know that Cleo will be thrilled! It's battery operated and doesn't require me to waste water but running it in the sink.

I removed it from it's box and set it on a table near the sofa. She really liked the box and the styrofoam filling, which wasn't the point.

It took her a while to get used to it...She has to check it out from all angles.

Then she has to stare at it and make sure it is what she thinks..

Yes, she approves. In goes her paw.

Unexpected Visitor

Sorry it's been awhile. Unfortunately, some not-so-great things are happening at work, and I've been applying to jobs like crazy. Pretty soon everyone will have my resume. :)

Anyway, I wanted to show you the visitor we had yesterday at my office. As I was walking in, I noticed an oddity on the wall. At first glance, I thought it was a turtle, but as I got closer, I saw the ears, and then...the wings!!

Yes, it was a bat! He hung around (ha ha) until lunch, then took off. At least he had a good parking spot. :)

Unplanned Weekend

Well, this weekend was supposed to be one for the record books of clean. Unfortunately, a virus had other ideas. So, instead of spending the weekend with the vacuum and the glass cleaner, it was spent with the bed and the toilet. (sorry for the graphics)

I need a weekend do-over but that isn't going to happen.

Today will be spent in bed, thinking about the things I would have done.

Of course, I'll probably surf Craigslist also, just in case I need something. ;)

Weekend Warrior

I'm sure you've noticed that I've been gone for a bit. Unfortunately, some class work needed to be done and I didn't have much time to do it. Anyway, it's been done, and I'm back.

This weekend, since there is no more homework, I'll be doing quite a bit at the casa. It's been neglected lately, and looks pretty bad.

I need to:
1. plant the tomato seeds
2. vacuum most of the house (sounds lovely doesn't it)
3. try to mow, but it's raining right now, so that may not happen
4. buy tile filler to work on 5 split tiles (it's really awful looking)
5. donate books to library and clothes to goodwill

Whew! I better start early!

Craigslist Find!

You know I love a Craigslist find and yesterday's was super! I scored this puppy for $10 buckaroos!

The bedroom needed a larger one to actually see the nightly news, and my first thought was to head over to craigslist and offer to re-home one.

Luckily, an older couple was getting rid of this gem!

Baby Blossom

I'm so excited to see my purple, pink, and blue babies grow and blossom! My babies (also known as hydrangeas) are so gorgeous in the summer, and continue to bloom with just a bit of hydration in the morning. I usually have so many from just these three plants, that I bring them into work for others to enjoy. A few flowers brighten everyone's day!

Healthy Potato Recipe

I love, LOVE, potatoes! They are one of my favorites, and I've begun to cook them as a healthier alternative.

Last night, I whipped this up:

Lemon Dill Potatoes:
* 4 potatoes
* 1/2 c olive oil
* 1/2 tsp garlic powder
* juice of 1 lemon
* 1/2 tsp of dill

Scrub the outside of the potatoes to clean the skin. Slice them very thin (the thinner you slice them, the faster they cook). Heat a skillet (that has a lid) on medium high. Add all ingredients except potatoes. Allow to heat for 3 minutes. Add potatoes and cook until golden brown, about 10-15 min.

Garden Party!

It's time to dig out my pots (no pun intended), grab my huge bag of potting soil, and plant my vegetable seedlings.

Last year, I had success growing cherry tomatoes in pots on my deck and I hope to do the same this year!

I'll branch out a little this year by adding:
- peppers
- cucumber
- carrots

Time Savers

I found these tips in Women's Day magazine, and thought they would be helpful for others!

1. Upon returning from the grocery store, portion snacks into baggies for easy access and portion control. I like to do this with cookies and grapes.

2. Take a basket around the house. Pick up anything that doesn't belong in that particular room, and place it in the appropriate home. I really like this idea because it's quick and easy.

3. Make a mudroom for umbrellas, shoes, etc. This cuts my cleaning time, because I don't track unnecessary dirt into the house.

4. To keep sheets together, put the entire folded bunch inside a pillowcase. It makes for a neat package and no more hunting!

Instead of Wings..

Try these buffalo meatballs! They are great for parties and your waistline!

Buffalo Chicken Meatballs
(modified from Women's Day magazine)

* 1lb ground chicken
* 1 cup bread crumbs (I used crushed crackers)
* 1/4 cup onion flakes
* 1 tsp paprika
* 1 tsp garlic powder
* 1/2 tsp salt
* buffalo sauce

Prep-
1. Preheat oven to 475.
2. Line a baking sheet with foil sprayed with Pam.
3. In a bowl, mix all ingredients.
4. Roll into about 32 balls and place on baking sheet.
5. Bake 10-12 minutes, rotating occasionally.
6. Remove from oven and drizzle with buffalo sauce.

Use ranch or blue cheese for dipping!

Teriyaki Baked Chicken

I tried to get creative last night with some chicken, and it was surprisingly good! I paired it with rice (cooked in chicken broth), and broccoli. Yum!

Teriyaki Baked Chicken

*5 boneless, skinless chicken strips
* 2.5 cups teriyaki sauce
* 1 cup teriyaki sauce
* butter spray
* 3 cups breadcrumbs (I used crushed crackers)

Preparation:
1. add chicken and 2.5 cups of teriyaki sauce to shallow bowl. Make sure teriyaki sauce covers chicken. Let marinate at least 1.5-2 hours.
2. Preheat oven to 400.
3. Remove chicken from marinade and dip into breadcrumbs. Make sure to cover thoroughly. Add to oven ready dish.
4. Spray with butter spray.
5. Cook in ove for 20-25 minutes or until done.

One of my new favorite applications (for my iphone) is the CIBO pedometer! It is easy to start and stop the pedometer, and saves my settings, including target weight, my height, etc.

It tracks all the details when I get my walk on. :) I really like how easy it is to read. No rocket science needed here.

And of course the app is free via the apple app store.

Vacation

March Goals

For March, I vow:

1. To enrich my person development by:
a. making a new healthy recipe and blog it. It's past time. Sigh.
b. Take at least 5 new pictures, and label them, to keep memories. Memories are great, but they are even better when I know what happened, and how.
c. Be romantic on a $5 budget. This can be done. Really.

2. to clean/organization/decorate the house by:
a. painting the twin bed. It's finally in the house.
b. re-homing the white desk. This would make a great desk, for someone else.
c. painting the office/guest room. It's still white from when I moved in...8 years ago.

3. to achieve a healthy(ier) me by:
a. walking for at least 25 consecutive minutes at least once a week. The weather is getting nicer which will make it easier for me to strap on my tennies. Hello sun!
b. attempting small changes in diet to eat healthier. For March- reduce amount of soda's and juices. It'll be tough, but I can do it.

Project- For Someone Else

I have an individual whom I use to reupholster my furniture and I can't wait to introduce the two of them.

This is a chair which the boy's parents were trying to re-home. I think it's gorgeous with it's wooden legs and sides.

I can just see it with some off white linen fabric and toile seat.

Liquidity

Our drinking glasses have slowly begun to disappear. One disappeared into the trash after being dropped into a thousand pieces. Another disappeared in the car. Perhaps it has found a new home under one of the seats. Yet another disappeared into my office, which is quite unusual considering my office is now very clean with new furniture (courtesy of the flood).

So, to make a long story short, this weekend was the weekend of glasses. I was so tired of washing what little glasses we had left, and didn't want to invest in paper or plastic, so off to Target I went.

I came home with 2 boxes of these beauties.

That gives me a nice round number of 12 of each. Although I'm not a fan of the juice glasses, they were a set. My theory is, if you are going to have a glass of anything- just have a big glass.

So, as far as drinking glasses go, we should be set for a little while longer. Drink on.

February Goals Update

February wasn't too bad. I'm still lagging behind in the clean/organize/decorate area. Hmmm...

Unfortunately, I still have not moved the twin bed into the guest room. It is currently living with my grandparents in their garage. Before the end of this week, I hope to have it in my garage. :) That's a start, right?

Regarding the wreath, I have my eye on quite a few on ebay, so hopefully this goal can be easily fulfilled.

The bedroom curtains are a fail, but not because I haven't tried. I've looked at Target, Walmart, Home Depot, and Lowes. My current favorites are these:

Field Trip

This weekend, the boy and I went to the science center to see the Titanic exhibit and the associated Imax movie. Unfortunately, neither happened. :(

The Titanic exhibit was full and the next Imax wasn't until much later.

So, instead, like the optimistic people that we are, we saw an alternate Imax film called Shackleton's Adventure.

Per the website "Experience the greatest survival story of all time on the four-story tall screen as you join polar explorer Sir Ernest Shackleton on his now legendary 1914-1916 Trans-Antarctic Expedition aboard the ship Endurance. The film follows three climbers retracing the historic steps of Shackleton and his crew and includes the original still photography and 35mm motion-picture footage of Frank Hurley, the official photographer for the Endurance expedition. While never accomplishing its goal of the first crossing of the Antarctic continent, the expedition is a larger-than-life testament to heroism and human endurance, with all 28 men surviving nearly two years in the barren, frigid Antarctic when their ship, Endurance, was caught in pack ice and eventually crushed."

Since this coming weekend is the last weekend for the Titanic, I'll get tickets in advance.

Dear craigslist, you are my favorite,
I visit everyday and savor it.

I browse through your household, electronics, and free,
hoping to find that one item that calls to me.

Sometimes it's a tv, a sofa or a bowl,
My excitement I can barely control.

Feverishly, I rush to my email, hoping for a steal,
typing furiously to close the deal.

Finally, I receive a note,
and rush for my coat.

I'm out the door like a flash,
racing towards my new cache.

Safely stashed in the back is my new toy,
I'm headed home to enjoy.

Garage = Disaster Area

This weekend I begged on bended knee (actually, I just asked nicely) for the boy to help me with the garage. It could've been declared a disaster area.

Really, how much cardboard, pieces of wood, and opened paint cans does one need? Evidently I need enough to clutter the garage and barely get 1 car into a 2 car garage!

So, out went all the "have too many's" and the "what the heck is that for's." It was actually quite liberating.

We were able to put many items together in these nice little thing called plastic containers, with lids! Wowsa! Now, everything is nicely organized and on one wall.

Unfortunately, I don't have a photo quite yet, but I will get one up here soon.

Happy clean garage day!

Here's the run-down:

Am I the only one obsessed with Burn Notice? It is so incredibly clever!

The premise is that the main character, Michael, has been "burned" (or let go) by the federal agency who was his employer. So, he can't leave Miami and his assets are frozen.

The episodes are about his attempts to locate the person who put the burn notice out on him. He is aided by a former girlfriend who was an IRA agent, ex Navy SEAL, and his mom.

The last episode I saw was a great one where Michael helped clean the neighborhood of drug dealers. Go Michael!

Sweet and Sour Chicken with Noodles & Egg rolls

As you know, part of my goals are to blog a new recipe every month. This month I attempted a little bit of Chinese. It was scrumptious! Next time I might try it with rice instead of the noodles.

Sweet and Sour Chicken with Noodles & Egg rolls

Ingredients:
* package of chicken breasts (I had a pack of 4)
* 3/4 jar of sweet and sour sauce (my jar was 12 oz)
* 1 tbsp teriyaki sauce
* 1-2 shakes garlic powder
* 2 8-oz cans of pineapple chunks (with juice)
* 1 package frozen pork egg rolls
* 1 package Simply Asian Sweet and Sour Noodles

Preparation:
1. Heat skillet on medium/high. Add sweet and sour sauce, garlic powder, teriyaki sauce, and both cans of pineapple with juice.
2. Let heat 5-7 minutes.
3. Cut chicken into bite-sized chunks. Add to skillet.
4. Cover half of skillet with lid and allow to cook until chicken is done (or white and not translucent).
5. Cook egg rolls and noodles according to package directions.

On the plate, add the noodles and eggrolls first. Then dish the chicken and pineapple onto the noodles. Enjoy!

A married couple who are close friends of mine, recently added to their family! It was a baby, but the four-legged kind. :)

She is such a cutie, and her name is Cora.

So, of course I am jealous and have begun to look for my own fur-baby.

Since my parents have westie's, I would really like one of my own.

I would also like to explore the Great Pyrenees.

But first, the back yard must be fenced. Really.

1. Remove the Christmas items and organize them. - done

Personal Development:
1. Start the book 'The Zoo Keeper's Wife.'- done.
2. Make a new recipe and blog it. -done.
3. Take more pictures to keep precious memories.- not done: I really need to be better at this.

Clean/Organization/Decorate:
1. Finish painting the desk.- not done: I tried to finish this during the weekend, but you really can't use spray paint in a bedroom and expect to have brain cells.
2. Move the twin bed into the guest room. - not done: I need to actually pick up the bed before I can move it anywhere. Sigh.
3. Replace Christmas wreath with spring wreath.- not done: Unfortunately, I really didn't make much of an effort to find a nice wreath. Maybe I'll carry this forward.

Professional Development:
1. Apply for at least 3 jobs.- done
2. Update resume. - done

Financial Times:
1. List at least 3 items on ebay. - done
2. Continue to use coupons and seek out good deals. - done
3. Put television in bedroom on a power strip and turn completely off when not in use.- done

Healthy Me:
1. Exercise at least once a week (need to start somewhere).- not done: Perhaps I need to try the mornings instead of the afternoons due to the number of "I need to's."

Today is that Day

Do you ever have those days where you put on certain clothes to make a really great combination? Well, today was that day for me! :)

Since we no longer have casual Friday's (no jeans- boo), I tried to select something a bit casual but nice in case tonight becomes date night. I'm so happy with what I chose! I decided on a monochromatic look, with a statement necklace (as influenced by Fab Finds under $50.)

So, today's outfit is gray pants, white cami, light gray top, black boots, and a pearl necklace with a ribbon tie. It was a great investment from a flea market. (Want one? Check out ebay's offerings!)

Wish List Trade Off

You know that I have been craving a riddling rack forever. However, they tend to be on the expensive side. :(

Aren't they gorgeous!

Anyway, while I was out this weekend at a local flea mall, I saw this wine rack and thought he would make a nice addition to my house.

I can see it with a glass top to hold baskets of pretty linens, the upper and middle shelf with wines, and the bottom shelf full of sparkling water.

Goal Update

This month is proving to be somewhat productive in the goal category.

Holiday/Seasonal:
1. Remove the Christmas items and organize them. - This was actually completed near the beginning of this month. :) I'm not really one to let my Christmas decor hang around longer than necessary. I even bought specialty boxes for the items, so next year won't be such a hassle.

Personal Development:
1. Start the book 'The Zoo Keeper's Wife.'- I started the book, but soon lost interest. Bummer.
2. Make a new recipe and blog it. - The recipe was meatloaf and you can see it here.
3. Take more pictures to keep precious memories. This is a work in progress. I took the camera when I went to visit my parents over the weekend, but didn't really use it. Instead, I used the iPhone. Yeah for gadgets!

Clean/Organization/Decorate:
1. Finish painting the desk.
2. Move the twin bed into the guest room.
3. Replace Christmas wreath with spring wreath.
Summing all of these up with "haven't started." I need to break out the spray paint for the desk, actually bring the bed to the guest room, and take down the Christmas wreath. Golly golly. I really do have time to do this on the weekends, but am not sure why it's not done. Sigh.

Professional Development:
1. Apply for at least 3 jobs.- Applications have been sent for at least 3 jobs. Mostly with the government. I guess we'll see.

Once I'm at the gym, I'm fine, but it's the "drag my lazy rear there" part that gets me. I will say that my eating habits have improved. Instead of eating out three times a week for lunch, I'm taking yogurt, carrots, and salads. I guess that's something.

Four Eyes

I did a little pre-planning this year and decided to put extra money in my flexible spending account for new glasses. Since both my prescription and frame preference have changed (ahem), I thought it was time.

My current glasses are nice, but they are rimless, and because I am a little on the blind side, the lenses are thick. Think bottle caps.

So, off to the store I went. It wasn't easy. I tried on so many pairs, that I began to think my face wasn't made for glasses. But after the third store, I finally found a winner.

I wanted something a little square to off-set my Because I have a round face, I need something rectangular, to make my face look longer.

They should be ready for pick-up at the end of this week! Yeah!

New Recipe- Meatloaf

It was my first time, ever, making meatloaf, and it turned out really well! I paired it with macaroni and cheese, and it was a hit!

Meatloaf

Ingredients:
* ground beef
* ground turkey
* 1.5 tbsp of pesto
* 1 tsp garlic
* 2 cup ketchup
* 2 cup dried onion
* 2 cup crackers (crushed)
* 2 eggs
* 2 tbsp butter
* set aside 2 cups ketchup

Preparation:
1. Preheat oven to 350.
2. Mix pesto, garlic, onion, ketchup, crackers, egg, and butter. Add beef and turkey
3. Place beef mixture in loaf pan (I actually used a square glass pan).
4. Top with 2 cups of the set aside ketchup
5. Bake for 1 hour.

Serve with your favorite side!

After Christmas Chaos

It wouldn't be Christmas without a little after Christmas chaos! You know the kind- wrapping paper everywhere, Christmas tree branches scattered about, and lights in bunches.

So this year I decided to make next year a little easier. Off to Home Depot I went, and purchased this guy, in green. After a bit of thinking, I actually bought 2 of the 54 gallon totes.

Let me tell you a little secret, I love organization and storage. So you can imagine how excited I was about this purchase. To be able to find everything for next year's holidays is priceless. Really.

When I got home, I couldn't wait to get started.

The large tree in the living room went first. Most of it fitted into one of the large bins. Yeehaw!! Next Christmas is going to be a breeze!

The smaller trees, stockings, and various other items went next. Before putting them into the storage bins, I placed them in one location to make the packing easier.

Now I need to find a place for them in the garage. Yippee!

Meal Plan Tuesday

I really need to keep up with this on a weekly basis or I'm afraid me and the boy will be eating cereal. And who really likes cereal when the temperature is 21 degrees! Yikes!

The options for this week are:
1. Beef taco's with Spanish rice
2. Steak with veggies
3. Meatloaf with mashed potatoes
4. Cheese tortellini with a pesto & tomato sauce and breadsticks.

I've decided not to bake this week because we still have a ton of goodies to make us fat and happy!

Bathroom Renovation

During my nice long holiday vacation (thank you university!) I've been watching alot of HGTV. Of course this inspired me to work on the bathroom.

So, for the last week or so, I've been slaving away on the bathroom.

First, I decided upon a light fixture. The bronze finish was a must for me, because of the warm feel it would add to my now white-on-white blah bathroom.

Next came paint colors. I ultimately went with a warm neutral beige. It has just enough color to be a color, but is also very versatile with all colors and patterns (hint).

Window coverings came next. Although the window has white blinds, it needed a little character. I choose a black and white toile print to make the neutral wall color pop.

Unfortunately, I'm just not ready. Between the Thanksgiving trip and the illness, I feel as though it's a half-Christmas this year. I've missed the baking, scurrying about, and the general yule-tide cheer.

But instead of lamenting the lack of time, I am going to go with the flow and enjoy. My family and friends know that I love them and I try to give to them all year long.

So, come Christmas, birthday, and New Year's. May the season be bright!

Another Easy Christmas Treat

If you haven't had these yet, get thee to the grocery!

Chocolate Butterscotch Haystacks

6-oz package of semisweet chocolate morsels
6-oz package of butterscotch chips
1/2 cup of chopped walnuts or peanuts
3 oz can of chow-mein noodles

Instructions:
1. Melt one 6-oz package semisweet chocolate morsels and one 6-oz package butterscotch chips together in a double boiler over low heat.
2. Let mixture cool before folding in a half-cup coarsely chopped walnuts and a 3-oz can chow-mein noodles.
3. Drop by tablespoonfuls onto a cookie sheet and refrigerate until hard.

Sometimes I add marshmellows and m&m's!! Yummy!

It's been quite a weekend for me. I had hoped to spend Friday night on a very special date night and Saturday with some friends making the season jolly. In addition to the last minute shopping that I wanted to do. :)

Unfortunately, fate had other plans for me. I began to get a sore throat on Thursday night, and by Saturday morning, I could hardly swallow.

So, off to the doctor I went and came back with prescriptions to treat my strep throat. Yep, I said it. It was nasty stuff.

Luckily, the meds have been fabulous and I am well on the way to happy, healthy holiday!

Easy Christmas Treat

If you haven't made Puppy Chow, then you are in for a real treat! It's crunchy, sweet goodness combined with some milk makes anyone's night a little nicer!

Puppy Chow Recipe

Ingredients:

1/2 cup Peanut Butter
1/4 cup Butter
1 cup Chocolate Chips
1/2 tsp. Vanilla
9 cups Crispix cereal (any flavor except Chocolate)
1-1/2 cups Powdered Sugar

Instructions:

1. Combine peanut butter, butter and chocolate chips in a microwave safe bowl.

2. Microwave for one minute then stir to blend all ingredients thoroughly. Add 1/2 tsp. vanilla. Stir well.

3. Place the 9 cups of Crispix cereal in a very large bowl.

4. Pour the peanut butter-chocolate mixture over the cereal and toss evenly, making sure all the cereal gets a good covering.

5. Place powdered sugar in large bag and add cereal mixture. Shake to cover each piece well.

This whole week has pretty much been dedicated to my Christmas list. Of course you know how the shops are right now- CRAZY!!

But I've discovered a new iPhone application to save time and money. It's called Pic2Shop. And it's FREE!

It's a barcode scanner which shows other prices for the same item. It is brilliant! You basically take a photo of the barcode and this app finds the item from other vendors and offers a price comparison.

It's love baby!

Since I'm traveling today, I made it a point to pick up cardboard coasters from various restaurants to use for this clever project:

Original purpose: Preventing pesky water rings on wood.

Aha! use: Tagging gifts for the people at home. Hang on to cardboard coasters from the bars and the restaurants you visit on your journey. When you return home with souvenirs for friends and family, punch a hole near the edge of the coaster, tie a ribbon through the hole, and write a quick note in an empty space (or on the blank side).

Place the bottle along one side of the fabric so that the bottle's top meets the top of the fabric. Fold the excess material at the bottom over the bottle, forming a pocket of sorts. Then roll the dish towel evenly and secure at the neck with ribbon.

Early Thanksgiving

Since I'll be going on a little trip for Thanksgiving, we celebrated early. It was super wonderful.

There was food as wide as the eye can see!! My mom made Paula Deen's uber-yummy stuffing, and we pretty much shoveled it in. Try it!

Paula Deen's Homemade Stuffing:

Cornbread, recipe follows
7 slices oven-dried white bread
1 sleeve saltine crackers
8 tablespoons butter
2 cups celery, chopped
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage (optional)
1 tablespoon poultry seasoning (optional)
5 eggs, beaten

Directions

Preheat oven to 350 degrees F.

In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside.

Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 minutes. Serve with turkey as a side dish.

Cornbread:

1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil

Preheat oven to 350 degrees F.

Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.

To serve, cut into desired squares and serve with butter.

Yield: 6 to 8 servings

My November goals are going so much better than I ever hoped! Here's the scoop-

Personal Development:
1. Continue to use coupons and seek out good deals.- This is ongoing and my budget thanks me.
2. Make a new recipe and blog it.- Still working on this.

Clean/Organization/Decorate:
1. Move console table into family room.- I hope to have this done by Friday and blog the finished product.
2. List a few items on ebay.- So done! Really! I was inspired by this article at manvsdebt.

Class:
1. Continue to complete assignments- My paper is 4/5 complete! Woohoo!

Console Me Update

You may remember this guy. He was a bargain-find in one of my usual places. :)

As you can see, I've been working on him to get him ready before the holidays creep up on me.

Instead of painting him white, I went with more of a creme, neutral color. It think it really highlights the detailed legs.

So far, he has been painted, and I am waiting for the gloss top coat to dry.

Hopefully, I'll have a picture for you soon!

Junk in the Trunk

This week I was so excited to get on Craigslist and find someone who was getting rid of (free) two trunks. They didn't post a picture nor dimensions, but that's ok. I love a good project. :)

Needless to say, I contacted the seller immediately and received a quick response.

Could it be one of these?

You KNOW what I did next! I envisioned these trunks in so many places!

* Perhaps storage in the garage?
* Perhaps storage in the extra bedroom filled with pretty linens?
* Perhaps an accent under one of the windows with a warm blanket?
* Perhaps a coffee table in my living room with some scented candles?

So many choices! I couldn't wait to get them home so I quickly emailed the seller and asked when I could go and get them.

This is what I got in response:

Did you miss it? Yep, me too. They didn't respond. Bummer. So now I have trunks on the brain, with no trunks.

Excitement!!

Yesterday, I asked about something on her inspiration calendar and she responded via blog! Now that's customer service!

I really liked this idea (below) and have most of the items, except the chunky turtleneck, so she gave me some ideas- on a budget.

If you haven't been to her site, she features fashionably fabulous items all under $50. Because who's closet couldn't use a little bit of fashionably fabulous!

Also, she compiles a monthly inspiration calendar to help for those of you with the "I-don't-know-what-to-wear-days." I have them, and you have them, but now there's a solution!

I really like the way she mixes JC Penney's, Old Navy, and thrifted 'pretties.' She really shows fashionably fabulous on a budget.

Turkey Month Goals

The Incredible Edible Egg

Yesterday morning, the boy made Paula Deen's omelet. Wow oh wow!

It was melt in my mouth good! He added tomatoes, mushrooms, cheese, and bacon.

What a great start to a Sunday!

Omelet:
* 1/4 cup tomatoes
*1/4 cup mushrooms
*1/4 cup bacon (cooked, crisp)
*1/4 cup cheese
* 3 eggs
* pinch salt and pepper

1. Bring 4 cups water to boil on stove.
2. Add eggs to bowl and scramble.
3. Put eggs in a zip lock baggie, along with tomatoes, mushrooms, bacon, salt/pepper, and cheese. Shake to mix.
4. Close/seal bag and place into boiling water on stove. Make sure water covers the bag. Add more water if needed.
5. Cook for 6-10 minutes, or until eggs set.
6. Remove bag from water and let sit for 1 minute.
7. Remove omelet from bag and enjoy.

I think I might make this ahead of time and leave in the fridge overnight for a quick, healthly breakfast.

October Goals Review

October wasn't too bad, although I think I had too many goals, especially with taking two classes! Whew!

Personal Development:
1. Revise budget, add more saving, less spending.- This wasn't easy, but definitely worthwhile.
2. Try a new recipe and blog-it.- I made Baked Ranch Chicken, with success!
3. Read "The How To of Happiness."- This was actually an interesting book, and I'm glad I read it.

Professional Development:
1. Apply for more jobs with my new degree.- I did apply for at least 2.
2. Read "Never Check Email in the Morning."- Unfortunately, I wasn't able to complete this goal. My classes have really eaten my time.

Clean/Organization/Decorate:
1. Return garage items to rightful owners (really).- I returned most of the items, but there have been other items added to the garage. Just when I think it's over...
2. Paint twin bed.- Unfortunately, I wasn't able to get to this.

Travel:
1. Take a day trip to local museum or park.- I visited a local museum to see their collection of weapons, both new and old.

Class:
1. Finish final paper (of graduate career).- I had hoped to be further along than I really am, but that's not the case.

Night of Subs

Last night, I was bitten by the cooking bug. Instead of getting out the usual frozen meal and heating some bread, I decided that chili would be so much better.

It actually came out well, although I substituted turkey for ground beef.

Unfortunately, the cookies didn't have the same luck because I substituted Bisquick for flour. I wouldn't recommend doing this.

The cookies looked great, don't get me wrong, but I couldn't get them out of the pan. Seriously, I was trying my hardest, not being gentle at all, but no-go. Or rather no cookies. Bummer.

I've learned my lesson, and hopefully, you've learned too. Remember, no substituting Bisquick.

Customized Shoe Love

Now, ya'll know that I love my shoes. Really. I do. But usually, I buy from stores in which anyone can buy the exact same shoe.

For example, my most recent shoe purchase was these:

I don't necessarily buy expensive or super special, but after looking at these on Etsy, I might change my mind...about the special, of course.

Per the seller:
"One pair of women's black patan peep toed high heels. They are custom decorated with swarovski's around the 1 inch platform heels measure a little over 4.5 inches tall. Depending on where the light hits the crystals they will shine purple,blue red yellow and other various colors. I wouldn't suggest taking these shoes out in the rain but the swarovski's are on well enough. I will include extra glue and crystals.I made these for myself before I got pregnant but never got a chance to wear them then my foot size changed so my loss I'd like them to go to a good home."

Wowsa! I might add these to my wish list!

Costumed Frenzy

Fall Colors

Fall is here and I just have to look out the window to see the colors. Easy-peasy!

Since my house backs up to the woods, I usually have a nice variety of colors to enjoy while I sip my morning java. Additionally, sometimes I can see deer and groundhogs. It's a menagerie!

Fall Fireplace

I finally got motivated and finished my fall fireplace. I had really huge plans for it, but ended up scaling it down and going with more of a "crafty" look instead of scary. Previous years I pulled out the black cloth, skulls, and spiders.

Instead of the "boo" effect, I wanted a comfortable and inviting look. Mission accomplished! :)

I debated about adding lights, but didn't want to make the linen twine too heavy.

Excuse the fan- it's still on because I cannot find the remote to turn it off.

Baked Ranch Chicken

As part of my monthly goals, I try to make at least one new recipe. It really helps with the meal planning. :)

Last night I made Baked Ranch Chicken, and it was a hit!

It was somewhat of an odd preparation, because I used french dressing as a marinade, but it was really good! Also, I used refrigerated chicken, because I did not have time to thaw it, but in the future I may get bulk frozen chicken.

Baked Ranch Chicken

Ingredients:
* 8 chicken breasts
* 1/2 packet ranch seasoning
* 1 cup bread crumbs
* pinch of garlic powder (or minced)
* salt & pepper
* 3-4 cups french dressing (or enough to coat chicken)

Preparation
1. Preheat oven to 375.
2. Mix french dressing, pinch of garlic, salt and pepper in shallow bowl. Add chicken.
3. Marinate for at least 1 hour (you can also marinate over night or while at work)
4. Spray glass pan with Pam or cover with olive oil.
5. Mix ranch seasoning and bread crumbs.
6. Remove chicken from french dressing marinade, but do not rinse. Dip marinaded chicken in ranch mix to coat thoroughly.
7. Place chicken in glass pan.
8. Cook for 30 minutes, or until lightly browned.

To Make a Grand Entrance

It was really time- trust me. My plain black door needed a touch of pizazz, a punch...a bam!

So, of course I pulled out the spray paint! It's my new best friend!

Before: Plain, black front door with standard gold tone hardware.

After: Shiny black door with bronze hardware and a welcoming wreath.

Just in case you cannot see the wreath, it has berries in fall colors, with a small sign that says "Family Matters."

This was an easy project (love spray paint), and it makes a real difference for my entrance. It will be a great fix until I can replace the door with one that has some glass.

Perhaps one of these? Wouldn't this be great in a another color with some lights hung on the inside?

Meal Planning Mania

Meal planning is usually one of my monthly goals, but it's pretty much a love/hate relationship. I love the benefits, but hate doing it!

I've made it a monthly goal to get in the habit- you know, motivation. That way, when a hungry redhead walks in late, from a long day's work, she doesn't have to eat cereal. Did I mention that the redhead is usually cold and grumpy too? Not fun.

The easy fix is to have a meal plan.

Now, in my head, a meal plan is something similar to a mix between Emeril, Paula Deen, and Rachel Ray. Yikes!

But in real life, I know it to be something that I can knock out in about 20 minutes on a Sunday afternoon. AND, it doesn't include any gourmet anythings.

I've Googled some Web sites for help, and found some great ones:

So, why don't I do it more often? That's a good question which I don't have an answer for. But, I'll get better. It needs to happen, and often.

Easy House Ghosts!

I love this House Ghost project! It basically uses rope lights, tomato cages, and some drop cloths. Easy and cheap! :)

Step 1: For each ghost, wrap a wire tomato cage with a string of clear rope lights. Home Depot has these for about 6 buckaroos!

Step 2: Cut a 6‐ x 9‐foot drop cloth to approximately 41/2 x 7 feet to cover the tomato cage. Use a black permanent marker to draw eyes and a mouth.

Step 3: Plug the lights into a secure grounded outlet. I'll also put the lights on a timer.
